With its thin, fluted 1-1/4-inch edges, this large 10-inch round tart dish with the ideal heat conduction for a nicely browned crust and firm center bakes and serves a party-sized classic caramel flan or a light quiche to a crowd of luncheon guests. An exquisite specimen of fine French pottery, this porcelain baker is simple in appearance, with its milky white color, smooth finish, and ridged sides--yet durable due to its proprietary time-tested ingredients and quality construction. The tart dish's pristine beauty and excellent temperature retention (both hot and cold) make it a wonderful serving vessel that goes from oven or refrigerator to table. Family-founded in 1818, the Pillivuyt porcelain factory still employs skilled artisans who use the original time-honored traditions of handcrafting each piece. Replacement molds are all handmade by craftspeople who have spent many years in training, and who shape them to the level of perfection that this superior bakeware requires. The result is a tough porcelain base that can withstand temperature extremes, making this baker safe to move among the oven, freezer, microwave, or broiler. And, with a little liquid in the baker, the pan can even be placed over a diffused flame on the stovetop. All pieces are glazed and fired at temperatures of about 2,500 degrees Fahrenheit, which produces a non-porous, rock-hard finish that easily cleans up by hand or in the dishwasher. I have several tart recipes and wanted a nice dish to present the desserts in. I purchased this and am happy with the quality and its performance, however I think it is a bit overpriced.
