True to tradition all Emile Henry pieces are carefully crafted from Burgundy clay, found naturally in the region. The mineral-rich clay is combined with 100-percent natural ingredients to create a product unsurpassed for even heat distribution. I decided to move up to better bake ware from aluminum and glass pans. After a rusting incident, I needed to replace my brownie pan and saw this beautiful ceramic bake ware. For any cook, there are a few things we look for in any kitchen cookware/ bake ware:Cooking:Although it is not nonstick, I didn't have any issues with making brownies and roasting a few chicken breasts with some spray oil.Foods cooked evenly. Also, because it retains heat, I pulled out the brownies a little early than I usually do because I knew it would cook more as it sat coolingCleaning:I use non-stick foil or parchment paper whenever I can. It helps foods from sticking as well as keeps cleaning down to a minimumFor times I didn't use the above, I just filled the pan with hot soapy water for 10 minutes and scrubbed with a non-scratch scrubbieWeight:This does have some weight to it. It is heavier than glass, so adding food to it also makes it even heavier. This isn't for the weak armed.Presentation:This can go from oven to the table or to a potluck looking great. Make sure you put your name on it because people may want to take it!Overall I am very happy with this purchase and to me; I will have it for decades to come. It is well made and I am looking to buy a few other sizes before the holidays start.
