Once pot heated to proper temperature I was able to lower the flame and reduce heat to maintain the same rolling boil while making fudge. That allowed for a creamer texture which was the desired result. Clean-up was very easy. I am waiting until next Christmas to see how well the non-stick material holds up to making 40 pounds of fudge. Presently, I would recommend to any cook or candy maker.
